Aromatic baked Cauliflower salad

AROMATIC BAKED CAULIFLOWER SALAD

SERVES 6 AS A SIDE DISH

Ingredients.

1 medium sized cauliflower

5 tablespoons of olive oil

Juice and zest of 1 lemon

2 tablepoons of baby capers

6 anchovies diced 

2 fresh chillies finely diced (Optional)

3 cloves of Garlic minced

1 bunch of shredded parsley

Salt and pepper to taste

Method.

Wash and trim cauliflower. The cauliflower can either be left whole or segmented into florets. Place cauliflower onto baking dish and brush with 3 tablespoons of olive oil, and season with salt and pepper. Roast in pre-heated oven at 180degC for 50 minutes and until golden brown. Heat 2 tablespoons of Olive oil in a skillet to medium temp, add anchovies, garlic, chillies and capers. Once garlic is slightly golden add all other ingredients. Turn off, mix well and pour over cauliflower. Serve warm or cold. This is great also tossed through fettucini or pappardelle pasta.
