Balsamic vine ripened tomato salad
Balsamic vine ripened tomato salad w/ Basil, Tuna, Goats cheese and toasted
One large Vine ripened tomato
200gm of Tuna in spring water
Small handful of basil- leaves picked from stem
20- 30gm of fresh Goats cheese
1 tablespoon of toasted pine nuts
2 Tablespoons of olive oil
1 Tablespoon of Aged Balsamic vinegar
Salt and pepper
In a small bowl combine oil and vinegar and whisk to combine. Season with salt & pepper
Slice the tomato in half then into quarters and then into eights. Toss the tomatos in balsamic oil and place on center of plate.
Top with Tuna, then basil and goats cheese.
Sprinkle with toasted pine nuts and drizzle remaining balsamic oil over and around salad.
Serves 1 generously. You can multiply this recipe as needed.
