Banana & Dark Chocolate loaf w/ slithered almonds
2 cups of plain flour
2 teaspoons of baking powder
4 ripe bananas mashed with a fork
125grams of butter melted
1 cup of caster sugar
2 eggs beaten
1 teaspoon of vanilla essence
1 cup of dark chocolate pieces
1/3 cup of slithered almonds
Preheat oven to 180 degrees. You will need to line a 11 x 20cm loaf tin.
Sift flour and and baking powder
Mix the melted butter and sugar together, add the eggs, bananas, chocolate pieces and vanilla essence.
Combine the dry and wet ingredients together and careful not to over mix.
Bake in the over for 1 hour and ten minutes. Test with skewer to ensure cooked all the way through.
Allow to cool on rack and serve with butter or toast under grill and top with vanilla ice cream.
