Berry Pavlova


Serves 6




4 egg whites

1 cup of sugar

200grams thickened double cream

150ml of Berry coulis

Fresh raspberries, strawberries & blueberries


Preheat your oven to 150 degrees.


Line a baking tray with greaseproof paper.


In an electric mixer whisk egg whites till soft peaks begin to appear. Add a tablespoon of sugar one at a time until all the sugar is added. It will appear thick and glossy.


Ladle the mixture into 6 portions and use an icing spatula to mould the meringues into round shapes. Slightly flatten the top. This allows the cream to  be served on top nicely.


Cook for 1 & ¼ hours. Once cooked turn the oven off and ajar the door allowing the meringues to cool in the oven.


Just before serving. Dollop with thickened cream, drizzle with berry coulis and top with desired fresh fruit.
