Black zucchini, feta and fresh mint salad
Serves 4
Ingredients
8 whole black zucchini’s (courgette) topped and tailed
Zest of 1 lemon
100 grams of crumbled feta
½ cup of loosely packed fresh mint leaves
2 tablespoons of balsamic vinegar
4 tablespoons of olive oil
*Extra virgin olive oil (EVOO) to drizzling over finished salad
Method
Preheat oven to 180 deg.C
Coat washed and dried Zucchinis with olive oil, and place on baking sheet…roast for 35 mins
On a platter, layer Zucchinis then cover with feta and mint. Repeat this process.
Drizzle balsamic vinegar and EVOO over salad, then garnish with lemon zest.
Note.
This salad is equally delicious served hot or cold. It’s also wonderful served as part of a picnic menu.
