Mussels with a rustic chili tomato sauce

 

Ingredients

1kg ok Mussels

Two 400gm-crushed tomato’s

Two Red Onions finely chopped

Four Cloves of Garlic Crushed

Two Birdseye Chili’s finely chopped

1/3 Cup of extra virgin olive oil

One cup of white wine

One Bunch of fresh basil shredded

One Lemon cut into wedges

Handful of fresh parsley roughly chopped

Crusty bread

 

Instructions 

On a high heat add your olive oil to a large pot. Add your Onions, Garlic and Chilli. Sautee till soft.

Add the wine and continue to sauté till the about half the liquid evaporates- aprox five minutes.

Add the tomato’s and basil. Then turn down the heat and simmer with the lid on for fifteen minutes- stirring occasionally.

Return to a high heat and then add you mussels.

Place the lid on snug so it the mussels can cook in the hot steam and sauce. Aprox 4-5 minutes. Toss them in the sauce and squeeze one to two wedges of lemon and sprinkle with parsley. Serve immediately.

Serve with Crusty bread.

A robust Shiraz will complement the tomato chili sauce.
