Pan Fried Ling w/ pearl cous cous, herbed salad and pesto

 

Ingredients

 

250gram of Ling fillets

tablespoon of butter

½ a lemon

1 packet of pearl cous cous

1 small brown onion

1 teaspoon of dried chilli flakes

2 tablespoons of fresh basil

salt & pepper

1 handful of fresh parsley & mint

1 teaspoon of olive oil and lemon

¼ lemon cheek for serving

 

Prepare the pearl cous cous to the packet instructions and include the sautéed onion, chilli flakes, fresh basil and season with salt and pepper.

 

Pick the mint and parsley leaves and place in a bowl. Just before serving toss leaves gently with lemon juice and olive oil.

 

Melt the butter in a non stick fry pan. On a medium to high heat

fry the Ling for 2 minutes each side.

 

Assemble the plate with pearl cous cous and place the Ling on top, garnish with pesto and serve with herb salad and a lemon cheek.
