Parmesan crusted pork cutlet

 

Serves 4

 

4  Pork Cutlets (thick cut)

¼  cup of plain flour

3 eggs whisked

1 cup of  fresh breadcrumbs

½ cup of freshly grated parmesan

salt & pepper

¼ of olive oil

50gms of butter

Fresh lemon wedges to serve

 

In order to crumb it’s an easy three step process.  1- coat the cutlet in flour 2- dunk into egg  3- press the cutlet into breadcrumbs.

Cover and refrigerate for an hour before cooking

 

Pre heat 180 degrees and line baking tray with baking paper

 

Heat non stick fry pan to a medium heat.

 

Add olive oil and butter to the pan

 

Add cutlets to the pan and fry both sides for 6 minutes.

 

Remove from pan and place into the oven for 8 minutes

Serve with lemon wedges
