Robust potato & Sicilian olive salad

 

Serves 4

 

Ingredients

 

6 medium Desiree potatoes cut in quarters

¼ cup of Extra virgin olive oil.

2 cloves of garlic crushed

1 Spanish onion diced

3 tablespoons of capers

4 anchovy fillets

1 cup of Sicilian olives, seeds removed

1 bunch of  parsley roughly chopped

1 tsp of  Dijon mustard

Juice of ½ a lemon

 

 

Wash potatoes and cut into quarters.  Place on a microwave dish covered with cling wrap and cook for five minutes in the microwave.

Remove dish from microwave and cover with a tea towel. Allow to cool for about ½ an hour.

In a mixing bowl add all the ingredients together and mix well.

Add the potatoes and stir till they are all coated well.

Serve.

 

Note. Desiree potatoes can be boiled if you prefer.
