Spiced Lamb cutlets & mint salad w/ Saffron yogurt

Spiced Lamb cutlets & mint salad w/ Saffron yogurt

 

Serves 2

 

10 frenched Lamb cutlets

2 garlic cloves crushed

½  teaspoon of cumin

½ teaspoon of coriander

½ teaspoon of dried chilli

Juice of one fresh lemon

3 tablespoons of olive oil

1 cup of fresh mint leaves

½ Spanish onion thinly sliced

1 long red chilli finely diced for garnish

 

Yogurt dressing

 

1 ½ cups of full fat Greek yogurt

pinch of saffron

½ crushed garlic clove

season  with salt

 

 

 

For the yogurt dressing: combine all the ingredients and refrigerate till required.

 

Place the cutlets in a mixing bowl. Add the spices, juice and olive oil.

Allow to marinate for 10 minutes.

 

Heat a fry pan or BBQ to medium heat. Add the lamb cutlets cooking for 3 minutes each side. Remove the cutlets from the fry pan and cover with foil while you fry the onion till it softens- around 4 minutes.

 

Arrange on your platter by layering the mint leaves and cutlets. Top with the onion and fresh chilli (optional)

 

Serve with the yogurt dressing
