Two Country Cooks Orange Cake

 

Ingredients

 

250 grams of butter softened

250 grams of caster sugar

4 medium eggs

2 teaspoons of finely grated orange zest

250 grams of self-raising flour

1/3 cup of freshly squeezed orange juice.

 

Icing sugar

 

150 grams of sifted icing sugar

1/3 cup of freshly squeezed orange juice

 

Method

 

Preheat the oven to 170 deg

Grease & line a 22cm spring form baking tin

Using an electric mixer beat the butter and cream for at least 4-5 minutes until pale white.

With the mixer still on add an egg one at a time until all blended together.

Add zest and flour to the mixture and finally the fresh orange juice.

Pour the mixture into the pan and bake for 40- 45 minutes. Check around 30 minutes that the cake isn’t browning too fast. If it is, place some foil over the top.

Test with a skewer and if it comes out clean then the cake is ready.

Remove from the oven and allow to cool completely on a wire rack.

Combine icing sugar and orange juice in a bowl and pour over the cake. Allow it to set and serve.
