Two Country Cooks Signature Roast Chicken




1 x 2kg Organic chicken

2 Garlic Cloves

Small bunch of fresh herbs including: Rosemary, Thyme, Parsley and Sage

1 lemon cut in half

40grams of Butter cut into four 10gram slices

Kitchen twine -30cm

Sea Salt




Pre heat the oven to 180 degrees

Place the chicken in a cast iron baking dish to prepare and cook in.

Use your fingers to gently separate the skin and the breast. Place two pieces of butter on each breast.

Stuff the cavity with the herbs and garlic and lastly position half the lemon to conceal the cavity.

Cross the legs and tie with the twine.

Squeeze the other remaining half of lemon over the chicken and sprinkle with sea salt.

Place the legs in first with the breast facing outwards.

Cook the chicken with 25 minutes for every 500grams.

Once the chicken is cooked, remove from the oven and wrap the cast iron baking dish with Foil and cover with tea towel for at least ½ hour.

NOTE: This is the most important step to insure the meat is tender.
