Yelverton Truffles Robertson
Ted & Barbara Smith who run and own Yelverton Truffle farm are producing world class truffles that are receiving international interest. Yelverton grow exotic Black Perigold truffles or (Tuber Melanosporum) under Quercus Ilex & Quercus Robur Oak trees at their small but highly productive La Truffiere. The cold climate, rich red soil, natural springs and regular rainfall all contribute to their very productive Truffiere.
We recently hosted our first Paddock to Plate culinary tour at Yelverton followed by a four-course lunch nearby. Our guests feasted on truffles with every course and we have provided the entrée on the day in our August recipes. This month we feature our “Pumpkin and goats cheese Ravioli with a garlic and Truffle butter”, paired with our palette cleansing raspberry and lemon “La Fromboise”. This was enjoyed with Tertini’s delightful 2013 Rosè.
